Hope everyone had a great Fourth of July yesterday. I’m still thrown off by celebrating on a Wednesday and I feel like I’m on working on Sunday today…
Yesterday started off with a little burner WOD (modified from NorCal’s programming):
- 3 rounds, run 400m, 15 DB thrusters and 15 burpees
I really went all out on the last run and could hardly breathe going into the DB thrusters. Solid ass kickin’ before the day’s festivities.
The rest of the morning was spent in the kitchen. I went on a paleo baking rampage. So much so that Dave nearly had to intervene, “when is this going to stop?!” as the pots and pans kept piling up in the sink.
First up was dark chocolate zucchini brownies. I found the recipe doing a simple google search of paleo brownies and the recipe popped up on Fast Paleo (let’s be honest, everyone chooses recipes based on if the food looks good in the picture). We received four zucchinis in our CSA box this week–so I went to town with the cheese grater while watching Independence Day.
Then it was time to pile in the rest of the ingredients:
I made the mistake of using a larger baking dish than what was recommended (9×9) so the batch was thinner than what these babies should have looked like, but it got the job done.
Unfortunately, I forgot to take a picture of the end product because we were running around trying to get organized before we left for the BBQs, but rest assured–they were great!
I have to admit that I actually made the brownies on Tuesday night so that I had enough time for more baking in the morning. Thus, Dave jumped in with his culinary skills and whipped up our dinner, Bacon Man Meatloaf:
And again, I don’t have a picture of the finished product as I was too busy inhaling my meal.
Next up was the Lemon Tart from PaleOMG (one of my favorite blogs) — I didn’t take any ingredient shots, but here’s the end result and it was a HUGE hit at the BBQ. Definitely making it again.
If this wasn’t enough, I baked a loaf of almond flour zucchini bread with the rest of the shredded zucchini…we decided to keep that to ourselves and enjoy throughout the week. So good!
I was exhausted after the workout and baking, but we finally made it to the two BBQs in our (aggressive) America gear and spent the rest of the day celebrating with friends. There’s something about this holiday that really kicks summer into gear for me. It must be the food, drink, country music and amazing memories…
